Spiced Pearl Couscous —gluten-free

Couscous is fun and easy to make. I found a gluten-free pearl couscous that is delicious. I used gorgeous spices like cinnamon, black cumin, and paprika that make this dish exceptional. 

Simplicity: easy

Time Consuming: 15 minutes

Taste: semi-sweet and salty

Recommendation: you may drain the liquid, or keep it for softer couscous. 

Ingredients: 

1 cup gluten-free pearl couscous

1 1/2 cups water

1 1/2 teaspoons grated orange zest

3/4 cup fresh orange juice

2 tablespoons raisins

2 tablespoons agave nectar

2 1/4  teaspoons black cumin

2 1/4 teaspoons ground cinnamon

1/4 teaspoon paprika

2 1/2 tablespoons fresh mint

2 teaspoons freshly squeezed lemon juice

1/2 teaspoon Himalayan pink salt



Steps:

1- In a medium pot combine the couscous, water, orange zest, orange juice, raisins, agave, cumin, cinnamon, and paprika. 

2- Bring to a boil. Cover. And reduce the heat. 

3- Let simmer between 7 to 10 minutes. 

4- Turn off the heat, drain if you wish, or keep the liquids. The liquid will be absorbed. 

5- Serve with lemon juice, mint, and salt.
